Monday Mix Up: Fun in the Sun

Hello friends!

I hope you enjoyed your weekend.  The weather has been hot gorgeous here in Florida lately and we spent most of it outside.  Our theme for the Monday Mix Up this week is "Fun in the Sun", which is perfect for our weekend roundup! 

Saturday we woke up bright and early and headed to the Jacksonville Zoo!  My cousin and her family and my aunt and uncle drove from Tallahassee and met us.  We had a great time with all the kids (they're so well-behaved) and made sure we covered every area of the zoo.  If you haven't been or haven't been in a while you need to check it out.  We really have an award-winning zoo and they keep making improvements.  Our favorites were the giraffes (and getting to feed them) along with the new tiger exhibit.    









Poor Graham, he enjoyed the carousel when it was stationary.  Once the animals started moving up and down, he hated it!



After our trip to the zoo we enjoyed burgers and my grandmother's pound cake (made with love by my mom, great job Mom!) at my parents' house.  We also had more fun outside playing in the sand box and playing corn hole.  We're so glad our family was able to come visit!


On Sunday our church hosted an old-fashioned Friend Day!  We had lunch on the grounds and enjoyed each other's company.  There were multiple bounce houses and toys for the kids.  It was a great time!

Happy Friday friends!

I don't know about you but I'm loving the color navy these days.  It's definitely my current color crush.  I especially love all of the nautical pieces I'm seeing everywhere.  They're perfect for spring and summer, especially here in Florida.  This romper from Boohoo is so adorable and I like how it is still conservative in length.  Playful yet classy!  I also love this swimsuit coverup from Nordstrom.  It looks so comfortable!  

My rule with the nautical theme is keep it simple.  For example, I would wear these anchor flats with these colorful red stripe shorts and a white tee.  I wouldn't wear a sailboat, anchor, stripes, etc. all together in one outfit.  It's overkill!  Keep it simple!

Quick & Easy Chicken Bruschetta Bake

"Let me know what I can do to help."  

That's what most people say when something happens to someone they care about.  You want to help but you're not sure how and when.  When it comes to situations like this my motto is "just do it".  Bake them a cake, take them a meal, buy them a mani/pedi.  Don't hesitate just do it!  Chances are they'll never ask for anything because they don't want to be an inconvenience (at least that's how I am).  Next time you find yourself wondering what you can do, try cooking my favorite recipe!

I love making this simple and quick Chicken Bruschetta Bake for my family & friends.  It travels easily and you can either bake it beforehand or have them refrigerate it and bake it when they're ready.  You can find the recipe below and also on the back of the Stove Top Low Sodium Chicken box.  (Tip: Use a disposable aluminum pan and tape the recipe on the top of the cover so they can save it and make it another time!)



Chicken Bruschetta Bake

What You'll Need:

1 can of diced tomatoes (14.5 oz), undrained
1 package Stove Top stuffing mix for chicken
1/2 cup water
2 cloves garlic, minced
1-1.5 lb. boneless, skinless chicken breasts (cut into bite-sized pieces)
1 tsp. dried basil leaves
1 cup shredded mozzarella cheese


What You'll Do:

Preheat oven to 400 degrees.

MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened. 

PLACE chicken in 3-qt casserole dish sprayed with cooking spray; sprinkle with basil & cheese.

TOP with stuffing.

BAKE for 30 minutes or until chicken is done.

Voila!  That's it!  
The cheese is so yummy melted on top of the chicken.

Monday Mix Up: Easter!

Hello friends!

It's so refreshing to start another week after Resurrection Sunday. What a great day we had celebrating our risen Savior!  

Our Easter weekend celebrations actually began Saturday night when we had my cousins and their daughter over to color Easter eggs.  Let me tell you, coloring eggs with two toddlers is not for the faint of heart!  Our strategy was to have Graham and Sawyer sit on top of the island while we helped them dunk the eggs into the cups.  I'd say it was successful for the most part.  Only a couple of cracked eggs and nothing spilled!



(Don't mind my extremely tan face, I just got a spray tan that afternoon.)

Sunday morning we woke up to discover that the Easter Bunny left some eggs behind for Graham!  He enjoyed throwing and cracking the real eggs so we snatched those up quickly.  He got the hang of putting the eggs in his basket in no time.






There's nothing quite like Easter Sunday at church.  We had a packed house at East Pointe and it was a wonderful time of worship!  We are so blessed to serve a risen Savior!  

After the service there was an Easter egg hunt in the soccer fields.  It was a joy to see how excited all of the kids were.  At first Graham was confused about what was going on but after coaxing him onto the fields, he loved it.  He was so cute picking up the eggs and putting them into his basket.  There was an Easter Bunny too and Graham was chasing him around.  That really surprised me since those strange bunny costumes always freaked me out.

After church we went to my parents' house for a delicious meal.  My mom sure knows how to cook!  Of course we had to take some family pics while we were there.  Here are a few of my favorites.

Happy Good Friday everyone!

It is certainly a Good Friday, isn't it?  I am so thankful that Christ died on the cross for me!  He did that for you too and loves you so much.  I want to make sure you know that.  Please don't hesitate to contact me if you have any questions about having a relationship with Him.  I'm certainly no expert but I know His love is real and would love for you to experience Him. It's important for me to acknowledge the importance of this day before getting into the fab finds. :)

I'm sure by now you know that I love accessories, particularly the ones that go around my neck.  I am not ashamed to wear scarves all year round and I think a statement necklace can make an outfit.   That's why I was so excited when I found these monogram infinity scarves for only $9.99 so I ordered two!  I was also beside myself when I saw that Forever 21 now has this mint floral necklace just like mine but for 3 times cheaper.  All of these necklaces would be perfect for Easter!

3 Ways to Wear: Striped Skirt

Hi Friends!

As you probably know by now, I love stripes!  So it shouldn't come as a surprise that I bought this fun skirt from J. Crew Factory recently.  The skirt is actually white (or almost ivory) and navy but it looks so close to black that I styled it with black too.  Who cares, right? :) I love adding pops of color with it like my yellow accessories and pink top.

I think this style runs slightly big so you could probably order one size down.  I would have done that but they were sold out so I just grabbed my normal size.  Scroll down for links and details for the three outfits shown above.
